Chili:
3 cans of beans: pinto, dark red kidney, red, black, turtle, chickpea/garbanzo are good examples (I personally use black, pinto, and chickpea)
2 cans of Eden diced tomatoes with green chilies
diced up onion
red pepper flakes
olive oil
bunch of cilantro all chopped up
cumin/cumin seeds
Sautee the diced onions in the olive oil on low/med heat till they become translucent and have lost the pungent raw smell. Add the red pepper flakes and cumin/cumin seeds, then stir around for a minute to draw the oils out of the spices and mingle with the olive oil.
Add the tomatoes and then the beans (all rinsed off to get rid of the excess sodium and seaweed (kombu)).
Cook on low/med heat, just to mix the flavors for about 3 to 5 minutes. Turn off the heat.
Add the chopped up cilantro, mix it in, and then let it wilt (will take about 2 to 3 minutes).
Add mock sour cream and avocado (good EFA oil) to garnish.
